The relationship between pressure & load is linear. If you want to maintain 'design' deflection of the tire, but you're using a different size tire, try this as a starting point...
Pressure = Pcar * (P2/P1) * (L1/L2)
where:
Pcar = pressure listed in the doorjamb
P1 = max pressure on sidewall of factory tire
L1 = max load on sidewall of factory tire
P2 = max pressure on sidewall of new tire
L2 = max load on sidewall of new tire
