Lightwood is the color of the wood dash for 2002 and the beginning of 2003. The distinguishing characteristic of lightwood is that it's dull, not glossy like the traditional dark burled walnut 99-2001 (also on the 9-5 Linear SportWagons for 04-05) or the darker, almost piano like, finish of the 03-04-05 Arc dash called darkwood. The dark burled walnut is probably what you referred to as cherry and is availible from Saab as an accessory for $295 I believe. Saab made a bunch of these to offset the backlash created by the aluminum look dash of the 2002 Aero.
Nothing wierd about 9-5 clutch pedals, unless of course you do drive a bad one or most likely your current clutch is shot and you don't realize it. That's a very common thing, you're used to your old stiff worn clutch and a new one feels wierd.
I think you just need a larger sample in a color you like.
