They start with the color code of the car, then they look at sometimes a dozen variation chips to get the closest match to your car. From there they can adjust air pressure of the paint to lighten or darken.
Finally the will often blend the color across the entire part, so that you won't see the transition.
For example: lets say you have a dent on the front lip of the hood. They will repair and prime the dent. Then they will put 2-3 coats of color on the repaired area. They will then mix in some clear coat into the paint and spray another coat across a little bigger area, then cut the color with more clear and spray an even bigger area, maybe cut the color again to the point where it is mostly clear and spray the entire hood.
Once it is all buffed you won't be able to see the transition.
