It all depends on what you are into. I lived there for ten years (left 15 years ago) and still find it fascinating to go back to. If you are on time constraints, I would recommend staying on Oahu. There is plenty to do there with or without your fiancé. May is the best time to go.
There is a lot of nightlife in and around Waikiki. Restaurants and bars are lively almost seven nights a week. (I have fond memories of before I met my wife.) There are several hiking trails that have easy access, which mean they are popular for visitors. Snorkeling at Hanauma Bay is a must. Highly recommend the Arizona Memorial, especially during this time of national stress. A drive around the Island would be fun to get a feel of the tropical side. The Polynesian Cultural Center is interesting and has a good luau/show. Bishop Museum and the Honolulu Arts Academy are good for a bit of culture. If you have time visit the only palace in the U.S. and the royal summerhouse. If nothing else, there is always golf. These are a few of my highlights. There is plenty more if you do a little research. Have fun, I always do when I return for visits.
