A classic motor will look great, but a newer electronic ignition model without points will start each and every time. The newer motors are far cleaner, especially the 4 strokes, most do not need to pre-mix the oil and gas.
Been there, done that with a early 1970's 15 horse Evinrude. When it started reliably it went like stink, but when starting after a spell of fishing, it was crossed fingers time. It seemed that we replaced the coils and plugs every year and still had less than stellar reliablility. And yes, the coils were NOT made by Lucas of that time.
A wooden boat it heavy, a trolling motor is great, but may not be up to a windy or choppy day. You can get a lot of distance out of a charge if you stop every so often and let the battery recover. Also consider the weight of a battery when comparing the weight of a gas outboard. We usually mounted the batter in front or amidships since it was 60-70 lbs.
No matter what else you check due to the termites make sure the transom is absolutely sound.
