Here's an article on poison ivy control...short summary: cutting, digging up roots, and chemicals. You may be able to plant some aggressive plants in the areas where the roots have been dug out to out-compete, but that may cause you more trouble in the long run.
The stuff typically grows in the shade so if you can clear some tree branches to let the sun in that may help.
If you're rural enough perhaps you could get some goats or sheep to eat the stuff.
I am SO allergic to poison ivy, I stay far, far away from it. In your position I'd hire someone to tackle the job!
