Regardless of power output, you are most likely using more fuel to travel the same distance. 8 cylinders vs. 4 cylinders--but I don't know specs on fuel injectors ...
One thing that I have noticed in my 91 9000S after driving it for a week trying to maximize fuel economy--the reading jumps up dramatically after the transmission shifts into top gear (it's an automatic).
Maybe the Infiniti's shift points are contibuting to it. Automatic or manual? If the Saab was a manual, and the Infiniti is an automatic, that would easily explain the difference.
