Plasma video help

I just bought a Pioneer Elite 43" plasma (this or the SPG paint job - I'm slipping) and hooked up my system.
I'm an audio guy - so no problem here... all optical!
My question is this: The cable comes into the house via coax, and my cable box has a "coax out" which I ran to the tuner. There is also an S-video out and standard audio jacks. What is the difference between using coax to the tuner versus the S-video?
TV looks good, but DVD looks awesome!!
TIA,
Steve
