Are you thinking of getting rid of the cast iron? I'd keep them. Those pans are timeless. With the the right seasoned coating, you can do so much with them! I use my cast grill pan to grill steaks in the winter time in my fireplace. SO GOOD!
Next, I'd go with a mix of manufacturers for the pots and pans. Spend a little money now and know that it will last the rest of your lifetime.
A good mix of stainless, anodized, and enamel coated is the way to go.
A Le Creuset Dutch oven is a must have.
A stainless, or anodized aluminum, omelette pan (or saute pan) is good to have.
And then a couple of medium sized pots are good. I have one all clad, brushed aluminum outside and stainless inside (4.5 qt), and one le creuset pot (3 qt).
All clad, calphalon and le creuset are good products. Look for cheap deals, don't buy from department stores. ebay has some good deals.
