I would choose RAID5:
1. Any controller card you get will likely handle 4 drives. You can initially setup using only 3 so you have the option to expand the array in the future, albiet limited in size by the smallest capacity drive in the array.
2. With a 3 disk RAID5 you only loose 1/3 of your total capacity to redundancy, compared to a full 1/2 with a 0+1
Downsides:
1. Even though 5 is pretty fast, a 0+1 would be faster
2. The redundancy is a little bit more secure in a 0+1
3. The controller card will be more expensive (although some of that is recouped by increased available memory per purchased drive).
If you do go 5 just make sure you spend the money and get a good card that does it's own parity calculations (hopefully with expandable RAM), otherwise you'll have a dog.
