If you eat hot or cold food, the temperature in your mouth will change - true. But the change in temperature is pretty small (4C to 44C). The difference in the coefficent of thermal expansion of metal vs your tooth is insignificant over that small temperature range, especially considering the small volume of metal per tooth and the flexibility of the tooth (they're pretty tough, actually).
Pain from cold/hot food or air is due to tooth sensitivity, not the metal expanding or contracting. Thermal conductivity of metal vs ceramics is also insignificant. Some ceramics actually have higher thermal conductivity than some metals. The metal could conduct heat faster than tooth enamel, but it won't conuct more heat over the few seconds of temperature differential.
