Routes 5 & 20 across NY will take you through many, many towns with the kind of restaurants you are looking for. This was one of the main east-west routes before the Thruway. One favorite is El Rincon Dos Mexican in Canandaigua (on Rte 20). It is authentic Mexican (not Taco Bell), with dishes I have never had anywhere else. It is a ways from Fredonia, though, so I am not sure how it will fit into your schedule.
