Your existing 8-speed controls will not work properly with newer 10 speed deraileurs (the 10 speed has different inter-gear spacing, not sure on the 9 speed) and may not work with the last generation 9-speed either. Shimano 105 components are very decent for casual riders; the finish is not as good as Ultegra and the deraileur may weigh 10 grams more, but you will not notice any real performance difference unless many additional parts are upgraded.

My advice: stick with the components that you have, rebuild the bike. If not, please send me your old parts as I'm putting a cyclocross frame together with various old 8-speed parts :) .
