As others have noted, it's individual.
Having watched my parents aged, it wasn't the stick. My dad was still able to shift just fine, but his eyesight and reaction time made that whole steering and parking bit problematic.
The only issue I'd see with a stick is knee/hip problems. And those can happen at any age - most of us are 'temporarily abled.' Diabetes can cause loss of feeling in the feet, which could impact shifting. I know of 30 year olds with a bad left knee that can't handle a manual shift. And Paul Newman could do a mean shift at 83.
I'd say that outside of joint problems that limit the ability to operate the clutch or shifter, shifting isn't the issue. If you've lost the coordination to shift, which requires no eye-hand coordination, I'll bet you're going to have a real problem with stopping, steering, and general situational awareness. Miss a shift, and you'll lose power or grind metal. Lose situational awareness or vision, and you're going to kill someone (one or many.)
