Do you like carrying large amounts of cash when you travel? I don't. Do you want to try to stock up on odd currencies in advance, i.e. Turkish Lira, Israeli Shekels, Jordanian Dinar, etc., then try to use them up completely before you come home? I'm not sure that it is even possible to find the currencies for some of the places that I have traveled to. Perhaps this is more feasible for the UK and EU countries.
US Dollars are not always an acceptable form of payment, and if foreign hotels do accept dollars, they typically add more than 3% to the cost - restaurants and stores typically will not accept dollars. Money exchange places typically charge through the nose, so I'm content with the 3% fee on credit cards.
