1) handle them both in store. I personally couldn't hold the small canons without my hand cramping up because of the small grip. The nikon felt quite comfortable in my hand. To go with a canon, meant moving up to a "big" body like teh 40D/5D/1D bodies. Out of my price range :)
2) If you already of a nikon film SLR (or friends with them) you may want to consider the nikon as they will mount all lenses (including pre AF lenses dating backing to teh 60's) and shoot them (with some tweaking possibly). The canon's can only mount lenses from when they converted to AF in the 80's
