If Canon's refurbs are as good as Apple's, the camera will be fine for a long, long time. I haven't bought a "new" Apple Computer in more than 8 years. The rest have been refurbs, and nary a problem with any of them. I've bought refurb iPods, and other Apple accessories, as well, all with the same good quality.
Often, Refurbs are simply returned floor models that get inspected, tested, and re-boxed. Usually, they carry exactly the same warranty as new. Apple's refurbs are also eligible for their full AppleCare extended warranty.
One thing you may have to contend with is the cosmetics on the refurbished unit. They usually don't replace cosmetic parts unless they are very out of place, or have lost their structural integrity. Not that you'll get something with parts falling off, but there may be scratches left on the units.
I would probably not buy a refurbished item as a gift, though, unless I knew the person well, and also knew that they would not be put off by the "refurbished" label. But that's a personal choice.
