It may not be an option for you but I went electric since I am in Florida and we have fairly high inlet water temps and no gas service in my neighborhood. 3 years ago I replaced a 40 gal tank unit and mounted the tankless at the same plumbing junction in the garage. I bought a Steibel Eltron whole house unit and installed it myself, already being near the electric panel made it very easy to run the wires and add the new breakers.
Regarding living with a tankless:
I've never had problem with not enough hot water - that is 2 showers can be running at the same time, there may be some transient situations where one faucet is being turned on or off where the temp might vary at the other faucet but it is very momentary as the electronics of the heater kick in. The Steibel looks to be one of the best electrics out there and i have seen them in public restrooms in Europe under sinks which get heavy use.
I would say location to the sinks is a concern (but not markedly different than a tank unit in my experience) There is a bleed through with any hot water system and the further away it is from the sink you are turning on the longer it takes to get full hot water. Granted a tank will transfer some heat down the water in the pipe but there is still bleed time and it isn't that much more, in fact I don't notice much of a difference between tank and tankless.
