Lump charcoal burns more quickly than briquets, mostly because of increased surface area, which allows more oxygen to the fuel. Lump is best used when you want a fast, very hot, short lived fire, perfect for Burgers and steaks.
Briquets are more dense, take longer to become fully involved, and burn longer and slower. Better for chicken, pork roasts or anything roasted by indirect heat.
Ideally, charcoal is pure carbon, and has little or no
smoke/flavor/character to impart "BBQ Smoked" flavor to your food. You must add some sort of flavorful wood to the fire to generate "Smoke". This wood must smolder, not burn cleanly, or you will get NO smoke, and no flavor. Freshly cut wood or soaked chips should be added to the edge of your fire, hot enough to smolder, but not burn cleanly. I prefer cherry, or apple for pork and chicken...
Most important, NEVER use "Match-Lite" or any other charcoal that has a "Starter"built in. These have a flammable liquid, usually Kerosine or other light oil fraction, that never burns off completely. Bad taste, and,
worse health impact.
Buy a Weber "Chimney" type charcoal starter gadget. They work great! Three sheets of newsprint, and in 15-20 minutes even briquets are ready.
