It sounds as if a dual-stage thermostat is what you want. One stage to control the wood burner, the second stage to activate the propane burners when the wood burner can't keep up. These are commonly used on air source heat pump systems for the same reason you are experiencing.
See link. I've used this source for specialty thermostate, humidifiers, furnace filters (they even send me e-mail reminder notices - that I don't need - to change the filters) and miscellaneous parts.
Lots of choices of 'stats, sorry I can't shrink the pool of candidates for you. But I've always liked Honeywell as they seem to be better made and quieter - no noisy snap switches.
