I think it depends on the situation. We also live in a late 1800's house that had minor structural issues when we bought it (undersized beams sagging, undersized joists for the spacing + some poorly chosen cut outs in beams + joists)... In our case, we jacked and straightened as much as we could in the first instance, then reinforced + lived with a few of the slopes. None of them are major + the foundation itself isn't moving. It is rarely trivial to make an old home entirely straight, plumb, square, + level!
If the foundation is moving, then professional consultation is probably warranted imho.
