15 acres is a pretty small field to bale the hay, but you could try getting a local farmer to do it. He'll have to come in with a "mower/conditioner" which cuts the grass close to the ground and crushes some of the water out. The grass has to be 2-3' tall, otherwise it's just not worth it and it will not rake or bale properly. Then he's got to let it dry a day or so, then come back and rake it to dry the other side of the windrow. Then back again to bale that (round or square) after the other side of the windrow has dried. Then he has to collect the bales (load onto a wagon, etc.)
This is not a 1-step process to turn grass into hay.
A 1-step solution is a local farmer who uses haylage (sp?), which is turning grass directly into silage for cattle feed. It gets cut and blown directly into a covered wagon. Not all farmers do this, and again the grass has to be pretty long.
FWIW, the last summer I spent on our family dairy farm, we did 13000 square bales over 3 cuts, baled directly onto hand-stacked wagons (250 bales/wagon). Auto-loading wagons didn't exist then.
