is there a reason you'd pull up the floor? by "joists look reasonable" do you mean they have not been butchered? what dimension + spacing? cross-bracing? are beam sizes adequate? (if you don't have it yet, there is a good reference book published by CMHC with tables etc: Canadian Wood-Frame House Construction)
unless there is obvious cause for concern ("soft" spots, undersized overspaced joists etc) + you were doing a flooring project anyway, I wouldn't pull anything up... it has lasted 100 years after all! If you are tiling a room (eg bathroom?), it may be worth doing something there, depending on what you find... I always lay cement board under tile as a minimum... you don't want a tile failure because your floor wasn't stiff enough.
This is where going whole hog in 1 go (like NoSnaab did) makes it easier. But, of course, it becomes a big project! It really depends on the condition of the house which approach makes more sense... not unlike restoring old SAABs actually!
