Something very wrong and potentially very dangerous is going on with that last fixture and/or the wiring to it. To blow the breaker you need a high current through a complete circuit. If the ground you are connecting is really ground, somehow the fixture is getting a Hot feed, meaning the fixture is live. I would triple check the wiring to that last fixture and make sure there are no other wires to the fixture. My suspicion is that you are tying the hot wire (black) to the fixture inadvertently making the whole thing live, thus connecting ground blows the breaker. Very carefully look at the hot wire where in enters the fixture and be absolutely certain there is no break in the insulation that allows it to contact the metal housing.
