Sinks usually are held in by a mix of gravity, clamping bolts/screws/fittings, plumber's cement and some of the fixtures. Getting it apart is mostly a matter of time and working carefully so you don't damage the countertop. But it's more annoying (the PIA part) than difficult.
One challenge can come with the dimensions of the opening when selecting the new sink. Hopefully you can get a new sink that's the same size.
We did our kitchen 10 years ago and put in a two-bowl porcelain on cast-iron sink by Kohler. It's a fairly standard item and you should be able to get it at Home Depot, Lowes, etc.
