holy crap we think alike... I have also considered post and beam for ours as we are space constrained and I want it to fit in aesthetically with an older house and neighbourhood. Our house is a tall gambrel so I'm thinking I can do 1 car worth of gambrel 12-14' high inside, with a second stall between that and the main house (slightly set back and connected with a lower roof). The idea is to make it look predominantly like a 1 car "carriage house" and understate the second door... fits the neighbourhood better... Post and beam would enable better clearances and an authentic barn-like interior, but post + beam is not cheap for materials nowadays + it requires numerous bodies experienced in that technique to raise the structure. Stick build is usually cheaper (unless you have a cheap source of timbers). So I'm not 100% decided. I may do a hybrid structure. Have you read Ted Benson's book? If you haven't you should - lots of great info!
I'm seriously considering doing bifold doors, in part due to the issues we've had with our current roll top (broken spring, rollers, track, mechanical connection to motor, rotting sagging door, motor issues)... normal overhead garage doors are not very compatible with lifts, though there are light steel rollups that only take up about 2' at the front of the garage vs the entire garage door height, and one can raise the tracks of overhead doors... well, I mainly just think the bifolds look cool! Mechanizing them will be a minor trick (wish I could find some long bidirectional threaded rod), and snow will be slightly inconvenient depending on how I make them swing...
