I've never had a tankless so I can't comment on how good they are or aren't. but your reasoning is specious. The hot water has to travel the same distance regardless of whether it's coming from a tank or not. It's not like the tank is pre-heating the pipes. The actual time it would take to get hot water up to your bathrooms would be the same as it is now, plus the 15 seconds or whatever it is for the tankless heater to get the water heated.
