I agree that without space, it's not really viable. That said, a parts car is handy in a situation where parts are not readily available, a car is unique or rare (and I suppose the parts car was acquired at a good price before prices go up due to rarity). An example might be a c900 or 99 or whatnot, where some parts are unobtanium, so if you break something that is non wear you have a replacement, or if you need to swap a part for testing you have an option...
Generally wear items are available new anyway and you don't usually do things like install used brake pads or whatever... but a broken seat belt latch, or a trim piece, or worn seat, parking lot damaged door... those things can be worthwhile swaps... though one has to factor storage cost vs the price of buying a part from the classifieds on an as needed basis. Generally a dirt cheap clean condition car with a bad engine or tranny is probably the most useful... (until you need the engine or tranny!)
