OT: plumbing advice needed (long)

I am replacing the faucets on tub/shower, and will be behind the wall working on the plumbig. I assume I will have to replace some old pipes, which appear to be galvanized, thread connector type. Questions:
these pipes have threads at both ends, how do I unscrew them? it seems that to turn the pipe would be to loosen one end, tighten the other at the same time, or am I turned upside down?
the piece that connects the two faucets, the spout and shower head (the one where the water goes in, mixes, and is directed out) appears to be brass, but the pipes behind the wall appear to be galvanized, is this a problem?
Tips on disassembling the old rotton pipes?
Will I be able to fit this whole thing together easily like a puzzle, or will I be calling the "24 hour emergency plumber"?
