First do the obvious and shut off the water.
Look for unions on the galvanized piping. If you have unions start there. Break the unions loose and start disassemling the pipe. I you have no unions, you can cut the pipe so that you can unscrew the sections you want to replace. You will have to make up the new pieces with a union. Take a good look at the galvanized piping and try to get an idea of the general condition of the piping.

For a novice DIY'er it will be easier to work with the threaded pipe vs the soldered copper.

Galvanized piping used to be the material of choice for water. Nowadays copper tubing is the material of choice. Galvanized pipe is still permitted by plumbing codes.

Where galvanized connects to copper or brass, you will be setting up a corrosion cell due to the disimilar materials. Do not worry about that too much, as the useful life of the galvanized piece will still be quite long.

When threading the pipes together I would recommend pipe thread compound "pipe dope" over the teflon tape. It is easier to apply and works much better. Some brands of pipe dope have teflon in it.

Make sure that the elbows behind the showerhead and spout are properly anchored to keep the pipe from sliding in & out of the wall. A dog eared elbow is typically used in these applications but other means of holding the pipe in place can be used.
