When I travel I go for art, music, food and drink (among other things).
Van Gogh is great, the musesum next door (Stedelijk) is a wonderful modern art museum. When I was there in November they had a neat exhibit by the cartoonist Crumb, and "The Beanery" Edward Kienholz piece that is great. see http://www.stedelijk.nl
If you're into music, the best jazz club I've been to outside of NYC is the Bimhuis. It's on the far side of the red-light district. Enjoy the scenery on the way there. See http://www.bimhuis.nl

For Classical music, Concertgebouw is world famous. I just saw a show in the JVC Jazz fest there last year. They do a nice mix of music, and it's very classy. see http://www.concertgebouw.nl/
The Leidseplein is a very cool area with clubs, restaurants, etc.
Good food: Top Thai - Herenstraat 22 (Thai food), Aneka Rasa - Warmoesstraat 25/29 (Indonesian)
Find a copy of "Boom Chicago" pamphlet. It's a comedy club in Leidseplein in English. The people write a decent guide to do's and don'ts in Amsterdam. I.e. they'll give you the real story on clubs, restaurants, attractions, red light district, and drugs.
If you smoke weed, you'll be in heaven. I don't, so I found the crowd of Americans and Brits who just show up and burn rather annoying.
Oh, you're just north of Belgium, so Belgian beer flows freely at most bars and restaurants. Enjoy some wheat bears, dubbels, trappist, Lambics, and other wonderful beers. Drink a Duvel for me. It's a great golden ale.

There's an internet cafe off the Damrak (main area off the train station) that sells blocks of time. It's demand based. If you buy when the place is jammed, you'll do worse. Go in off hours and buy a block of time and you can use it whenever you please.
A gentleman who looks similar to me was spotted going into the Casa Rossa on more than one occasion. Quite a show in the red-light district. I heard it's pricy, but the classiest of the bunch. So I'm told.
My mom, grandma and sister just got back last week. They were on a "flower" tour of the country. If you're into seeing that, look up the flower auction on google, I'm told it's amazing.
