You can certainly save a lot by not going for the fastest thing out there. I also don't think most applications you would use over the next four years would need much more than a mid-to-high end computer.
One thing to consider is whether you really want a laptop. Are you really going to carry it to class every day? It's going to get heavy doing that, and it has a high chance of getting stolen the more you travel with it. If not then a desktop and a handheld like a palm might be another option. You can easily track assignments, meetings, and everything else on a palm, and then synch it up when you get home. The desktop has more power for cheaper, and is a lot easier to type on. I just got out of grad school, and saw very few people carrying laptops around. A lot depends on your intended major, and whether you can type fast enough to take notes in class (or if you plan on taking notes at all!)
I would give it some thought and ask some other college students to see what they did and if they would do it again.
