The primary thing to go wrong with a synthetic oil is turning acidic. This is caused by blowby, leaky valve guides, und unburt fuel getting into the oil at shutdown. And the detergants in the oil not being able to keep up. This can be tested at home. When I had a daily 100 mile commute in my turbo car this was about 8,500 miles. You can get a kit to test this yourself.
As to viscosity breakdown, synthetics are highly resistant. It would take a long exposure (like an oil cooled turbo running at 15 psi boost with no oil cooler) to actually breakdown a synthetic. A contamination (lots of unburt fuel) can make the oil test thinner, but the lube properties are still there. If you have a turbo car, a cool down period after a hard run will prevent help this also (heat soak of the oil remaining in the turbo)
If your engine is running clean and not contaminating the oil, and its not making metal (if its making metal, all the filter changes in the world won't help) a quaility filter should outlast your oil.
