Congrats on your first!
The Ford Escape or Toyota Highlander are both still SUVs and get vastly better mpg than any you mentioned. They are recommended by many and will certainly check all the boxes your wife seems to think she needs. (and they've been out long enough to be on the used car market) Furthermore, is it really in the best interests of a new parent to have to get out and re-fuel a big SUV as often as they require? I rented a Pathfinder in FLAAAT Florida and refueled it usually every 4 days (with lots of driving, admittedly). In my Saab (at worst, 8mpg better) I fill up once a week, maybe. You really want to spend precious time away from your newborn, out in the weather, smelling fumes, pumping gas?
The trucks you've been considering are still quite big, ponderous, incredibly heavy, un-fun to drive vehicles. If you have to avoid one, I'd definitely skip the VW Toureg for its lousy quality. (one friend Lemon-Lawed his). Somehow, our three kids rode around in a Golf and Civic for years.. and it worked fine but if you still want a non-hybrid SUV, I second Justin VanAbrahams, The Forester, RAV4 and CRV are bigger than you think and very well regarded.
