Hi Brad,
not a specific jetting recommendation, but maybe a baseline orientation where to start and where to go.
I can only advice to find someone with a rolling road and knowledge in jetting of carburettors. Your setup is too specific to run on a general jetting setup. Been there, done that...
Every engine, if tuned like yours, needs an individual fine tuning to run properly and not go up in pieces due to bad fueling.

There is an overview with varios Saab engine setups and recommended jetting. Maybe you can start from this...
I had my carbs mostly setup and jetted by a workshop speciallised in Weber carbs here in Germany, but I have also done some on my own.
I have welded a threaded insert for a lambda-sensor into my exhaust (after the y-connection). This one is usually closed with a plug, but for tuning I have made use of an Innovate wideband measurement tool. Driving aroung with the tool running and logging what the exhaust gases do in various driving conditions. And then made changes taking into account which jet would change what...
