Hi Ryan,
I know what you mean about mounting the wheels! A solution I've been using for decades is to get some threaded rod that fits the threads. Cut two pieces about 4 inches long. I cut a screwdriver slot in the end with a hacksaw. You then thread these in two opposite holes and hang the wheel on them, as opposed to trying to get it sit on the little ledge. Put in a couple of lug bolts and remove the hanger bolts. Works like a dream! Seems like I first saw this trick from Jack Ashcraft and he used to sell a little kit all made up. You could also use suitable bolts and cut off the heads.
Others have converted to wheel studs, but I don't have the particulars.
