If you're going to put work into full restoration, pick a car that's lots more simple, from the 40s, 50s or 60s, say an early Porsche or one of the British sport cars. You could potentially make money if you buy right.
The hardest part is, there are SO many parts to later cars, and some of them sealed electro-mechanical units which can't be reliably called rebuilt or perfect, AIC motors say, and the body itself is very complex and hard to put right if at all rusted.
Full stripping of a body to me is NOT the right way to do it, unless you also have tanks to apply factory epoxy undercoating and factory quality paint and undercoat. Not even the prettiest body shop paint job will hold up to the weather as well as Saab's original paint has, unless it's a two -part paint and done over excellent body repairs, as well as sealed right down to the edges of the bodywork. The original bodies have lots of lap seams that are rusting right underneath intact undercoating, pulling moisture out of the air and destroying body integrity.
Nice to dream. Buy a pretty good one, keep it dry and baby it, and fix all the mechanical things you can, is my advice, and you'll get years of enjoyment and even turn some heads.
