I'm not sure why you are bleeding the clutch hydraulics in both directions when you have the Motive Pressure Bleeder. The "reverse" method is useful when a proper pressure bleeder is not available, but if you have the Motive, just pressure bleed it from the top, and it's done.
The spring bellows helps to keep the throwout bearing against the fingers of the clutch. Without it, a strong pressure plate may have enough force to "fling" the throwout bearing farther back, out of contact with the fingers. Remember, there is nothing impeding the fluid from being pushed by the slave piston back through the lines to the reservoir. A small gap between the throwout bearing and pressure plate may well feel like a huge gap or air bubble at the pedal.
