That verges on a total misunderstanding of oil technology. Lets start with some basic:
Conventional single weight oil: "30 weight" consists mostly of a base stock of 30 weight oil.
Conventional multi weight oil: "10w30" consists of 10 weight oil, and viscosity improvers that thicken as they get hot, to give an oil that behaves as if it were 30 weight when it's hot.
Viscosity improvers are molecules that are wound like a spring when cold, and unravel when hot. By unraveling, they get longer, and make the oil thicker. Most of the breakdown in conventional multi-weight oil viscosity is these VI's being physically cut into smaller pieces. None of this is "synthetic".
Synthetic oils refer to base stocks which are synthesized, not refined. there are various classes of synthetic. There are synthetics that are made from non-synthetic oil, in a process called hydro-cracking, this is the class where there is debate as to whether they are really synthetic or not. Then there's the classes of totally synthetic oils, mostly we are talking about PAO, and Esthers. These are not petroleum products. In europe, hydrocracked oil can not be called synthetic.
Synthetic oils, as stated, have wider viscosity indexes naturally, and do not often require viscosity improvers to thicken them when they are hot. Since it's these products that wear out, what determines the useful lifespan of synthetic oil is not wear, but Contamination.
The issue of sludge is not a simple one, but the main issue is Acid, not water per-se. Many of the non-synthetic oils, not being formulated for extended drain intervals, don't have a high enough TBN to handle the acid from the blowby in these cars.
