Have friends with a really old house, the earliest parts built about 1740. Stone foundation, but the wood framing and floors still settled over time. The dining room floor (middle of house) is tilted so that if you dropped a marble it would move in a curve across the floor.
Instead of jacking, when they did major renovations and added on, they just reinforced the floor from beneath to prevent any future settling. Worked fine. Old houses all have issues like this. Comes with the territory.
