Before I bought my used Saab, I tried all three engines. Each as their advantages. I also disagree with the previous poster that the V6 is a subpar engine. It's the best engine of any car I've ever owned (my last car was a Maxima).
The Sport button is a must during the test drive. The Winter mode really does help in snow.
If you live in a hot climate I highly recommend you get a model with the perforated A/C seats. These are awesome on a 100 degree day.
My MPG is 17 - 18 city and 29 - 30 highway with new tires, you'll experience less on the highway if you're tires are worn. I understand people get 35 MPG highway with the I4 engines.
These are complicated engines. If you like the car I'd highly advise you get it checked by a good Saab mechanic. Worth the doh.
Like any Euro car, these require you be a proactive owner when it comes to service. Do this and you'll have a wonderful experience.
Best of luck,
01 SE V6.
