It's the stopping that is the issue. Now I have in the past towed a C900 on a dolly with a car other than a Saab and no trailer brakes. I lived. It was, shall we say, an exercise in looking ahead and planning my decelerations. With a manual shift and the opportunity for more effective engine braking you will have a little less excitement than with an a/t under the same circumstances. For just a single trip, you'll be fine, brakes or no, if you're careful.
I have heard that U-haul dollies now come with (hydraulic) surge brakes. I have also heard that they won't work, due to abysmal maintenance. See what you get. Also, you can tell them you're towing a VW or bug-eyed Sprite.
I tow a 9-3SCV back and forth to Florida every year (1000 miles) using my own dolly with its own electric brakes. With a dolly and C900 CV you are technically within the limits of the car's 3500 lb. tow rating, not withstanding the fact that the same car in Europe has a 1800 kg (4000 lb.)
