Been there - well, not nearly so deeply. You hate to include a new hub as part of a brake job, but it looks like you might be there.
A bit of advise for stuck rotors - get the largest bolt that is a slip fit through the caliper mounting holes and a nut to fit. About 2 inches long should do it. Get two sets if you have a "bad feeling". Slip the nut in place between the caliper mount and rotor (Naturally you will have already removed the caliper) and thread the bolt through and press off the rotor! A little at a time - half turn, release, turn 90 degrees, repeat as needed. Worked for me after no end of hammering helped (although in true honesty, I never was able to hit it hard enough to break it ;-).
As for the set screw, in my experience I have never ever been successful with an easy out on a rusted stuck fastener. Their only use, IMO, is for when you snap it off (or bung the head) while overtightening.
