You are pretty crazy doing it that way.
But hopefully you got away with that stunt. You will know if you damaged the cylinder head or not when the cooling system is repaired and you drive the car again.
When the coolant level is low enough and the temperature probe is not submerged in liquid, the temp gauge is not accurate anymore and many have smoked the engine thinking everything was ok because the temp gauge was normal or below normal.
