Thanks for the input. It definitely seems like the coolant bypass valve.
In my particular case, it seems as though it's only leaking between the reservoir and the valve. IE., the coolant in the engine block is fine.
At the gas station where I stopped I filled up the reservoir with some clean water and noticed it began to leak at the valve mentioned above. So I decided to try and drive a few miles and see what happened.
About 10 minutes into the drive I got the SID message about low coolant again. But I also noticed that the engine temp remained fine. So I kept going.
Engine remained fine for another 90 minutes of driving. When I got home, the engine wasn't overly hot but the aux electric fan was running (that rarely happens on my car). So I'm not sure if it was leaking anything from the engine or just from the reservoir as I said.
It gets very hot down here in the South so I need max AC quite often. I doubt I'll just bypass the valve. I suspect the folks over at (formerly SAS Saab) might have one or two in stock or can at least get a GM replacement somehow.
I'll post a follow up when I have some more info.
Thanks again.
