The 9-5 was a more expensive car than the og9-3 and it is also more likely a newer car you are looking at, so it will be worth more than your car was actually worth. If you were to have put your car up for sale prior to the accident, there would be no way I'd pay $7500 for it. Maybe $5k tops (and only that much because of the excellent condition and your thoroughness + perfect history). That's only because I am aware of the things that can come up at 160k on those cars, and because I like the 9-3, but it is not my specific dream car (at 160k, yours is higher mileage than any SAAB I own). You probably would find a fanatic who would pay $7500 through the TSN classifieds, but most would not. At 160k, we all know that there are things to do, and a buyer does not have the sentimental value attached to the car that the owner does...
Looking at the mileage of cars in the classifieds here... The only ones near 40k are 2008/2009 and asking is double your payout (with the exception of a sold 04 wagon). Low mileage cars are out there, but probably will be overpriced, and possibly only driven to church (not great for the 9-5, as it likes highway). Expect 100k range for 04-06. In that ballpark, there is an 04 Aero for $6.2k, and 03 Aero for $6.5k, 01 Aero for $4.8k. 02 Aero for $6k (last 3 were stick), an 04 wagon $6k, and others that are now sold... near me, there is a SAAB dealer listing a 2005 auto sedan with 65k for $8k. So I that should give you an idea of what they are normally worth. Outliers (2004 manual aero wagon with 40k) will be outliers in price also. Looking for outliers is not as easy!
What the 9-5 is worth on the market is the worth to SAAB fanatics, because nobody else would buy them anymore (knowing the company's situation anyway). So the ability for a seller to ask top price is correlated to the number of local SAAB fanatics, and the seller's need to move the car. Often the high asking price examples sit and sit and sit. You might have to find a market where there are more cars than enthusiasts to find a good price. I drove about 250 miles to buy our car. It had sat on a lot for 2 months, they had dropped the price 2x and swapped on 17" wheels, and I still got $500 off what they were asking. There was no interest. They didn't know how to sell SAABs.
You can put a price on an owner's meticulousness and complete history. It is of value, but not infinite value. Stuff still breaks. So it's a plus, but owning since new is no guarantee, and at 160k, stuff breaks. You can buy cars with history (and pay more for that - in doing so, you put a price on that)... it's very helpful! If the history is good, it adds value to the car, and if there are questions it helps you decide to pass. Alternatively, you can buy a car with no history, that 1) looks great for what you can see, 2) checks over well mechanically with your tech (if you can't), and then 3) make all the rest right out of your own pocket after purchase. Use the lack of history and any issues you find to bring down the price to accommodate repairs. Lots of people do it. I've never bought a new car. Just don't ignore the big stuff: rust, engine, tranny. Any signs of problems there, walk... unless the price is reaaaly cheap.
Finally, there are people just like you who are sitting on very minty cars. I have 2 c900's, and follow that bb, and fairly regularly a nice example still comes up. Enthusiasts do still sometimes need to sell. Only thing is, if you want a mint 25 year old car, the price can be much higher! Mint SPG's are now worth more than similar condition Aero 9-5's! 5 figures easily.
