Unfortunately, there is probably no way to know *for sure* what's in the car. By default, anything MY1991+ in the U.S. that's non-turbo should have a 2.1l motor in it, by as I'm sure you're well aware there is no guarantee than previous owners (or mechanics) haven't swapped things in and out...
You can check the fuel injection - all 2.1l motors should have LH 2.4.2. That means a black air mass meter and a 3-pin idle control valve, and blue-topped fuel injectors. You can check the head - a 2.1l head will have the main engine electrical grounded to two lugs tapped directly into the head (vs. two lugs into the forward engine lift point on a 2.0l) and intake manifold runners tangibly a larger diameter than a 2.0l motor. You can check the block, which would have a crank position sensor on the oil pump housing (vs. a hall-effect sensor in the distibutor).
All that said, nothing would prevent all this stuff being swapped around. IMHO, your best, most-likely indication of it being an actual 2.1l motor would be the combination of LH 2.4.2 electrical bits and the crank-mounted position sensor. Gettting those parts, in combination, onto a 2.0l motor would be a major undertaking. Certainly not impossible, but a pretty important bit of work.
Out of curiosity, why do you think it's a 2.0l?
