I had the same symptoms after I did my 5-speed conversion (all new parts, except the clutch pedal). It turned out that the slack in the system was a worn clutch pedal. The hole where the cotter pin that attaches the pedal to the master cylinder had become enlarged.
It is easy to check for this -- lay on the floor of the car looking up at the pedal (bring a flashlight), and note the pedal travel before the piston rod begins to move. I replaced the pedal, and the clutch worked perfectly thereafter.
A new clutch pedal is about $80. If you'd rather invest time than money, there's an easy fix. Search here under "clutch pedal", or go to the Townsend site where the fix is discussed in great detail. Basically, the hole in the pedal become enlarged into an oval, and what you'll do is drill out the hole to a larger diameter, making it circular again and insert a larger cotter pin, or bolt. The tedious aspect is that you have to enlarge the hole in the yoke for the attachment point on the master cylinder too. It is a lot easier to replace the pedal, but the DIY is not that bad either (apparently).
