You can take the head off with the manifold on, but I would not reinstall it with the old gasket and studs on it. Gaskets can fail and old studs can break. I myself wouldn't want to do a head job and then have that happen once I put it all back together. If a stud breaks while you are taking the manifold off while you've got the head off it is no big deal to rectify. If one breaks while you are trying to replace a leaky gasket with the head back on the motor, you have a serious issue on your hands. New gasket and new studs is the way to go.
Shortcuts will inevitably bite you in the ass as some point.
