Unfortunately, Saabstuff appears to have gone out of business; their product was awesome. Worldupholstery and trim (worlduph<dot>com/saab/) is the only other business I know of that sells duplicate of original as a kit. They sell both leather and vinyl replacement skins, IIRC.
I don't know anything about their quality though. I bought one of their carpet kits and was not impressed, but maybe that's just because no sewn carpet replacement is going to be as satisfactory as the molded original. But it is a place to at least look at.
Another option to consider is finding some decent used skins and redying them. After I bought my new leather from Saabstuff, I bought a leather dying kit from Leather World technologies in Roanoke, VA and had them custom color match for me (see link below)for my door cards. It was very cheap (about $100) for what I needed and the results were great. This is best applied using an air brush. Here's a pic of the finished results (it looked even better after I got rid of the old purple door inserts).
